Method
Seperate egg whites from the yolk and beat the egg whites until they have tripled in size. Set aside. Use an electric mixer or you will beat until the lock down is over
Sift flour , baking powder and sugar. Add in your milk, oil, yolks and essence. Mix in egg whites gently.
Bake for about 30 minutes or until skewer comes out clean.

For the chocolate sauce
1 cup milk
1/2 cup good quality cocoa powder (Robertson is very good)
1/4 cup icing sugar
Mix well and microwave for 2 minutes.
Dip vanilla squares into chocolate and coat with coconut.

If you talk about essence when you add milk,oil & essence you mean vanilla essence
