Homemade strawberry ice cream

Homemade strawberry ice cream is a delightful treat, especially during the warmer months. Here’s a simple recipe to make it at home:

Ingredients:

  • 1 pound fresh strawberries, hulled and sliced
  • 3/4 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 cup whole milk
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a mixing bowl, combine the sliced strawberries, 1/4 cup of granulated sugar, and lemon juice. Stir until the strawberries are well coated in sugar. Let the strawberries sit at room temperature for about 30 minutes to macerate and release their juices.
  2. After 30 minutes, transfer the macerated strawberries to a blender or food processor. Blend until smooth. You can adjust the texture to your preference, leaving some small chunks if desired.
  3. In a separate mixing bowl, whisk together the whole milk and remaining 1/2 cup of granulated sugar until the sugar is dissolved.
  4. Stir in the heavy cream, vanilla extract, and a pinch of salt until well combined.
  5. Add the strawberry puree to the milk and cream mixture and stir until evenly incorporated.
  6. Pour the mixture into the bowl of an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Transfer the churned ice cream to a freezer-safe container. Cover with a lid or plastic wrap, pressing it directly onto the surface of the ice cream to prevent ice crystals from forming.
  8. Freeze the ice cream for at least 4 hours, or until firm.
  9. Once the ice cream is fully frozen, scoop and serve. Garnish with fresh strawberries or mint leaves if desired.
