Caesar Chicken with Asparagus

My man is totally obsessed with this dish. He’s on my case to whip it up weekly.

Caesar Chicken with Asparagus

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 bunch of asparagus, trimmed

1 cup Caesar dressing

1/2 cup grated Parmesan cheese

1 lemon, sliced

Fresh parsley, chopped (for garnish)

Instructions:

Preheat your oven to 375°F (190°C).

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for 3-4 minutes on each side, or until golden brown.

Remove the chicken from the skillet and set aside. Add the trimmed asparagus to the skillet and sauté for 2-3 minutes, just until slightly tender.

Return the chicken breasts to the skillet, arranging them on top of the asparagus.

Pour the Caesar dressing over the chicken and asparagus, making sure they are evenly coated.

Sprinkle grated Parmesan cheese over the chicken breasts.

Place lemon slices on top of the chicken breasts.

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Once done, remove the skillet from the oven and let it cool for a few minutes.

Garnish with chopped fresh parsley before serving.
