Ingredients:

For the Coconut Rice:
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1/2 teaspoon salt
Instructions:
- Marinate the Chicken:
- In a bowl, mix together soy sauce, olive oil, lime juice, honey, minced garlic, ground allspice, ground ginger, ground cinnamon, ground black pepper, and salt.
- Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
- Marinate in the refrigerator for at least 15 minutes, preferably up to 2 hours for more flavor.
- Prepare the Coconut Rice:
- In a medium saucepan, combine jasmine rice, coconut milk, water, and salt.
- Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- Make the Mango Salsa:
- In a bowl, combine diced mango, red bell pepper, red onion, jalapeño, fresh cilantro, lime juice, salt, and pepper.
- Toss gently to mix all the ingredients. Set aside.
- Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Remove the chicken from the marinade and shake off any excess.
- Cook the chicken breasts for 5-7 minutes on each side, or until they are cooked through and have a nice sear. The internal temperature should reach 165°F (74°C).
- Serve:
- Place a serving of coconut rice on each plate.
- Top with a cooked chicken breast.
- Spoon mango salsa over the chicken.
- Garnish with extra cilantro, if desired.
