Best Crispy Okoy Recipe

INGREDIENTS

2 cups sweet potatoes peeled and grated
1 pound shrimp peeled, deveined, and finely chopped
1/4 cup green onions finely chopped
2 cloves garlic minced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon dried thyme
2 eggs beaten
3/4 cup all-purpose flour
Oil for frying vegetable or canola
For the Spicy Remoulade Sauce:
1 cup mayonnaise
2 tablespoons mustard Dijon or whole grain
1 tablespoon ketchup
1 tablespoon horseradish
1 clove garlic minced
1 tablespoon lemon juice
2 tablespoons capers chopped
1 teaspoon paprika
1/4 teaspoon cayenne pepper
Salt and pepper to taste
INSTRUCTIONS

Prepare the Fritter Mixture:
In a large bowl, combine the grated sweet potatoes, chopped shrimp, green onions, garlic, salt, pepper, paprika, and thyme.
Stir in the beaten eggs and flour until well mixed.
Heat the Oil:
In a large skillet, heat about 1/2 inch of oil over medium-high heat.
Form and Fry the Fritters:
Scoop about 1/4 cup of the fritter mixture per fritter into the hot oil. Flatten slightly with the back of a spoon.
Fry for about 3-4 minutes on each side or until golden and crispy.
Remove from oil and drain on paper towels.
Make the Remoulade Sauce:
In a small bowl, combine all remoulade sauce ingredients. Mix well until smooth.
Serve:
Serve the fritters hot with the spicy remoulade sauce on the side.
