Homemade Pickled Beets

Beautifully colored and not overly spicy. This is how my mom always made her pickled beets, and I continue the tradition.

Ingredients:

8 medium fresh beets
1 cup vinegar
1/2 cup sugar
1-1/2 teaspoons whole cloves
1-1/2 teaspoons whole allspice
1/2 teaspoon salt

Scrub the beets and trim the tops to 1 inch. Place them in a Dutch oven and add enough water to cover them. Bring to a boil, then reduce heat and simmer, covered, for 25-30 minutes or until tender. Remove from water and allow to cool. Peel the beets and slice them; place them in a bowl and set aside.
In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and let it boil for 5 minutes.
Pour the hot vinegar mixture over the sliced beets. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
Drain the pickled beets before serving.
