No-Bake Peach Raspberry Cheesecake

Ingredients:
– 2 cups graham cracker crumbs
– 1/2 cup unsalted butter, melted
– 2 cups cream cheese, softened
– 1 cup granulated sugar
– 1 cup heavy cream
– 1 teaspoon vanilla extract
– 1 cup fresh peaches, sliced
– 1 cup fresh raspberries
– 1/2 cup peach preserves
– Whipped cream for garnish
– Fresh peach slices and raspberries for garnish

Directions:

1. In a bowl, mix graham cracker crumbs with melted butter. Press mixture into the bottom of a cheesecake pan and chill in the fridge.
2. In a separate bowl, beat cream cheese with sugar until smooth. Add heavy cream and vanilla extract, mix until well combined.
3. Pour half of the cream cheese mixture over the chilled crust in the pan.
4. Layer sliced peaches and raspberries on top of the cream cheese mixture.
5. Spread peach preserves on top of the fruit layer.
6. Pour the remaining cream cheese mixture over the fruit and smooth the top.
7. Chill the cheesecake in the fridge for at least 4 hours or overnight to set.
8. Before serving, garnish with whipped cream, fresh peach slices, and raspberries.

Total Time: 4 hours 20 minutes
Yield: One cheesecake, serves 8-10
