Spinach Stuffed Pastry
Spinach Stuffed Pastry is a delicious and versatile dish that can be served as an appetizer, snack, or even a light meal. Here’s a simple recipe for making these savory pastries:
Ingredients:
- 1 package frozen puff pastry (2 sheets), thawed
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 (10-ounce) package frozen spinach, thawed and well-drained
- 1 cup ricotta cheese
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1 large egg (for egg wash)
- Sesame seeds or poppy seeds (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the well-drained spinach and cook for another 2-3 minutes, until any excess moisture evaporates. Remove from heat and let cool slightly.
- In a large bowl, combine the spinach mixture, ricotta cheese, feta cheese, Parmesan cheese, lightly beaten egg, salt, pepper, and nutmeg (if using). Mix well.
- Prepare the Pastry:
- On a lightly floured surface, roll out one sheet of puff pastry to smooth out any creases. Cut into 4 equal squares.
- Place a generous spoonful of the spinach mixture in the center of each square.
- Fold each square into a triangle, sealing the edges by pressing with a fork. Repeat with the second sheet of puff pastry.
- Egg Wash:
- In a small bowl, beat the remaining egg with a tablespoon of water to make an egg wash.
- Brush the tops of the pastries with the egg wash.
- If desired, sprinkle with sesame seeds or poppy seeds.
- Bake:
- Transfer the pastries to the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and puffed.
- Serve:
- Let the pastries cool slightly on a wire rack before serving.
- Serve warm or at room temperature.
