Baked Spinach Mushroom Quesadillas Recipe
Ingredients:
- 8 flour tortillas
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: salsa, sour cream, or guacamole for serving
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute.
- Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.
- Add the chopped spinach to the skillet and cook until it wilts, about 2-3 minutes.
- Season the mixture with salt and pepper to taste.
- Remove the skillet from heat and set aside.
- Assemble the Quesadillas:
- Place 4 tortillas on a baking sheet.
- Evenly distribute the spinach and mushroom mixture over each tortilla.
- Sprinkle shredded cheese over the filling.
- Top each with another tortilla to form a quesadilla.
- Bake:
- Bake the quesadillas in the preheated oven for about 10-12 minutes, or until the tortillas are golden brown and the cheese is melted.
- Flip the quesadillas halfway through the baking time for even browning.
- Serve:
- Remove the quesadillas from the oven and let them cool for a minute before cutting.
- Cut each quesadilla into wedges.
- Serve warm with your favorite salsa, sour cream, or guacamole.
