Austrian Buchteln

Ingredients:

4 cups all-purpose flour

1 cup milk, warm

1/3 cup sugar

1/3 cup unsalted butter, melted

2 eggs

1 packet dry yeast (0.25 oz or about 2 1/4 teaspoons)

1 teaspoon vanilla extract

A pinch of salt

About 7 oz plum jam or apricot jam for filling

Powdered sugar for dusting

Directions:

In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for 10 minutes until frothy.

Add the melted butter, eggs, vanilla extract, and salt to the yeast mixture and stir well.

Gradually add the flour, mixing until a soft dough forms. Knead for 8-10 minutes until the dough is smooth and elastic.

Cover the dough with a cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough, then divide it into 12 equal pieces. Flatten each piece, place a teaspoon of jam in the center, and seal the edges to form a ball.

Place the filled dough balls close together in a buttered baking dish. Let them rise again for 30 minutes.

Preheat the oven to 180°C (350°F).

Bake the Buchteln for 25-30 minutes, or until golden brown.

Dust with powdered sugar before serving.
