Baked Spinach Mushroom Quesadillas Recipe

Ingredients:

  • 8 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: salsa, sour cream, or guacamole for serving

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another minute.
    • Add the sliced mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.
    • Add the chopped spinach to the skillet and cook until it wilts, about 2-3 minutes.
    • Season the mixture with salt and pepper to taste.
    • Remove the skillet from heat and set aside.
  3. Assemble the Quesadillas:
    • Place 4 tortillas on a baking sheet.
    • Evenly distribute the spinach and mushroom mixture over each tortilla.
    • Sprinkle shredded cheese over the filling.
    • Top each with another tortilla to form a quesadilla.
  4. Bake:
    • Bake the quesadillas in the preheated oven for about 10-12 minutes, or until the tortillas are golden brown and the cheese is melted.
    • Flip the quesadillas halfway through the baking time for even browning.
  5. Serve:
    • Remove the quesadillas from the oven and let them cool for a minute before cutting.
    • Cut each quesadilla into wedges.
    • Serve warm with your favorite salsa, sour cream, or guacamole.
