Barbecued Chicken Patties
Ingredients:
500g chicken mince
1 small red onion, finely chopped
1 garlic clove, crushed
1/2 cup fresh breadcrumbs
1/4 cup finely chopped fresh flat-leaf parsley
1 egg, lightly beaten
2 tbsp olive oil
Salt and pepper, to taste
Optional: 1/2 tsp chili flakes
Instructions:
Prepare the Mixture: In a large bowl, combine the chicken mince, red onion, garlic, breadcrumbs, parsley, and egg. Mix well until all ingredients are thoroughly combined. Season with salt, pepper, and chili flakes if using.
Form Patties: Divide the mixture into 6 equal portions and shape each portion into a patty about 1.5 cm thick.
Preheat BBQ: Preheat your barbecue or grill to medium-high heat. Lightly brush the patties with olive oil.
Cook Patties: Cook the patties on the barbecue for about 4-5 minutes on each side or until golden brown and cooked through.
Serve: Serve the patties hot with your choice of buns, lettuce, tomatoes, and condiments. These patties can also be served over a fresh salad for a lighter option.
