Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1½ cups (300g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup (120ml) whole milk
  • Zest of 2 lemons
  • Juice of 2 lemons
  • ½ cup (100g) granulated sugar, for lemon syrup
  • 1 cup (120g) powdered sugar, for icing
  • 2-3 tablespoons lemon juice, for icing

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Stir in the lemon zest and lemon juice until evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan(s) and spread it out evenly.
  8. Bake in the preheated oven for 30-35 minutes (for a 9×13-inch pan) or 25-30 minutes (for round pans), or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the lemon syrup by heating the lemon juice and granulated sugar in a small saucepan over medium heat. Stir until the sugar has dissolved, then remove from heat and set aside.
  10. Once the cake is done baking, remove it from the oven and immediately poke holes all over the top with a toothpick or skewer. Pour the lemon syrup evenly over the warm cake.
  11. Allow the cake to cool completely in the pan before removing and transferring it to a serving platter.
  12. In a small bowl, whisk together the powdered sugar and lemon juice to make the icing. Adjust the consistency by adding more lemon juice if too thick or more powdered sugar if too thin.
  13. Drizzle the lemon icing over the cooled cake.
  14. Slice and serve your delicious homemade Lemon Cake!
