Captain D’s Batter Dipped Fish

Ingredients:

  • 1 lb white fish fillets (cod, haddock, or pollock)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup cold water
  • Vegetable oil, for frying
  • Lemon wedges, for serving (optional)
  • Tartar sauce, for serving (optional)

Instructions:

  1. Prepare the Batter:
    • In a large bowl, whisk together the flour, cornmeal, baking powder, salt, paprika, garlic powder, onion powder, and black pepper.
    • Gradually add the cold water, whisking until the batter is smooth and lump-free. The batter should be slightly thick, but still pourable. If it’s too thick, add a little more water.
  2. Heat the Oil:
    • In a large, deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
  3. Coat the Fish:
    • Pat the fish fillets dry with paper towels.
    • Dip each fillet into the batter, making sure it is well coated. Let any excess batter drip off.
  4. Fry the Fish:
    • Carefully place the battered fish fillets into the hot oil, a few at a time to avoid overcrowding.
    • Fry for 3-4 minutes per side, or until the fish is golden brown and cooked through. The internal temperature should reach 145°F (63°C).
  5. Drain and Serve:
    • Remove the fish from the oil using a slotted spoon and transfer to a paper towel-lined plate to drain any excess oil.
    • Serve the fish hot with lemon wedges and tartar sauce, if desired.
