Caramel Apple Cheesecake Bars
I have made these several times.
It was delicious this way as well. The tangy sauce was really nice.
I really love the apple and streusel topping that I cut the cheesecake portion by 1/3 and kept the rest of the recipe the same.
My family loves these cheesecake bars and we’ve been making this recipe for years now.
This dessert is AMAZING! I love caramel and apples and this recipe has great flavor.
It’s a little bit of extra effort but it’s totally worth it.

What do you need to make Caramel Apple Cheesecake Bars
Biscuit Base
2 cups digestive biscuit
1 ½ cup unsalted butter, melted
Cream Cheese Filling
1lb cream cheese, room temperature
1 cup icing sugar
2 eggs, lightly beaten
1 tsp vanilla extract
Apples
3 Granny Smith apples, finely chopped
2 tbsp brown sugar
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp salt
Streusel Topping
1 cup plain flour
1 cup brown sugar
½ cup quick cooking oats
½ cup unsalted butter, room temperature
½ tsp ground cinnamon
Caramel Drizzle
½ cup caramel
How to make Caramel Apple Cheesecake Bars
Biscuit Base
Preheat an oven to 350F and grease a baking dish
In a mixing bowl add the digestive biscuits then crush using the base of a rolling pin. Crush the biscuits to a fine powder then stir in the melted butter.

Pour the biscuit base into a baking dish and tightly press down to form a thick even layer.
Cream Cheese Filling
In a mixing bowl add the cream cheese and icing sugar, whisk together until smooth and creamy, beat in the eggs and vanilla extract to combine.

Pour the cream cheese filling into the baking dish over the biscuit base, smooth down with a spatula.
Apples
In a bowl combine the apples, brown sugar, cinnamon, nutmeg and salt. Toss together then add a layer of apples over the cream cheese filling.
Streusel Topping
Place the plain flour, sugar, oats, butter and cinnamon into a bowl, mix together to create a crumbly topping.
Scatter the streusel topping over the apples in the baking dish.

Transfer the apple cheesecake to the preheated oven and bake for 40-45 minutes.
Once the cheesecake has set, remove from the oven, whilst warm drizzle the caramel over the whole cheesecake.
Allow the caramel apple cheesecake to cool completely then slice into bars and serve.
