Caramel Brioche

Ingredients :

  • – 500 g of flour
  • – 225 ml hot milk
  • – 2 eggs
  • – 3 tbsp of sugar equivalent to 60 g
  • – Two tbsp of butter equivalent to 40 g
  • – 30 g oil
  • – salt and vanilla
  • – A tbsp full of baker’s yeast
  • – caramelized condensed milk
  • – eggs to grease
  • – Toasted almond flakes, for garnish
  • – Chocolate for decoration

Method:

Mix the yeast with the lukewarm milk and leave to act, then add all the ingredients to the flour except the butter. Knead everything well for five minutes and add the butter and return to knead until you obtain a smooth and well-kneaded dough.
Leave to infuse, then divide it into balls according to the muffin mold
We grease the molds with butter and sprinkle them with flour, then we spread the balls and fill them with caramel and cover them well
We put them in the molds and let them ferment a second time. We brush them with eggs and put them in the preheated oven until tender. Once cooled, decorate them with caramel.
Fondant with milk, chocolate and almonds.
