Ingredients:

  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

For the Coconut Rice:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 teaspoon salt

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix together soy sauce, olive oil, lime juice, honey, minced garlic, ground allspice, ground ginger, ground cinnamon, ground black pepper, and salt.
    • Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
    • Marinate in the refrigerator for at least 15 minutes, preferably up to 2 hours for more flavor.
  2. Prepare the Coconut Rice:
    • In a medium saucepan, combine jasmine rice, coconut milk, water, and salt.
    • Bring to a boil over medium-high heat, then reduce the heat to low.
    • Cover and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
    • Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
  3. Make the Mango Salsa:
    • In a bowl, combine diced mango, red bell pepper, red onion, jalapeño, fresh cilantro, lime juice, salt, and pepper.
    • Toss gently to mix all the ingredients. Set aside.
  4. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Remove the chicken from the marinade and shake off any excess.
    • Cook the chicken breasts for 5-7 minutes on each side, or until they are cooked through and have a nice sear. The internal temperature should reach 165°F (74°C).
  5. Serve:
    • Place a serving of coconut rice on each plate.
    • Top with a cooked chicken breast.
    • Spoon mango salsa over the chicken.
    • Garnish with extra cilantro, if desired.
