Chard Croquettes

Ingredients:

1 onion
1 tablespoon of Oil
1 cup Swiss chard
2 eggs
Salt to taste
pepper to taste
nutmeg to taste
1 cup of Flour 000
baking powder
w/ grated cheese

Directions:

We start by chopping and sautéing the onion in a pan with a drizzle of oil.
Then we add the previously cooked and finely chopped chard, we sauté everything for a few minutes.
When we have sautéed everything, we pour it into a bowl and mix together with the 2 eggs.
We also add salt and pepper to taste, while mixing, nutmeg, baking powder, grated cheese and the cup of flour.
While we combine all the ingredients well, we heat the oil in a pan.
When we have reached the desired temperature, we put the croquettes to fry, for this we use a soup spoon and we place each tablespoon of the mixture in the oil.
As the croquettes are being made and browned, we place them in a dish with absorbent paper to remove the excess oil, well drained.
In the case of making them stuffed with cheese, it is suggested to cut the cheese into sticks and then wrap the croquette with the mixture, giving it shape. Finally, we fry them until golden brown.
