Chinese Secret to Soften the Toughest Beef

  • 1 pound beef (such as flank steak or sirloin), thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sliced mushrooms
  • Optional: sliced green onions and sesame seeds for garnish

For the Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon cornstarch
  • 1/4 cup chicken broth or water

Instructions:

  1. In a bowl, combine the thinly sliced beef with soy sauce, rice wine or sherry, cornstarch, sugar, salt, and white pepper. Mix well to coat the beef evenly. Let it marinate for at least 30 minutes at room temperature or up to overnight in the refrigerator.
  2. In a small bowl, mix together the sauce ingredients: soy sauce, oyster sauce, hoisin sauce, cornstarch, and chicken broth or water. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and spread it out in a single layer. Let it sear without stirring for 1-2 minutes to develop a nice crust. Stir-fry for another 1-2 minutes until the beef is almost cooked through. Remove the beef from the wok and set aside.
  4. In the same wok or skillet, add another tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  5. Add sliced onion, bell pepper, broccoli florets, and sliced mushrooms to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  6. Return the cooked beef to the wok and pour the sauce over the beef and vegetables. Stir well to coat everything in the sauce. Cook for another 1-2 minutes until the sauce has thickened and the beef is fully cooked.
  7. Garnish with sliced green onions and sesame seeds if desired. Serve the velveted beef stir-fry hot with steamed rice or noodles.
