Chocolate Éclairs: the step-by-step recipe to have them perfect

Ingredients: – For the chocolate cream:
250 ml of milk
3 egg yolks
60 g sugar
25 g di more starch
120 g dark chocolate-
For the choux pasta:75 g water

75 g latte55 g of butter1 pinch of salt1 teaspoon honey80 g of flour2 large eggs or 3 small eggs- For the icing:70 g liquid cream70 g dark chocolate20 g of butter

1. Prepare the cream by beating the eggs with the sugar, then add starch and warm milk. 2. Now heat the mixture in a saucepan, stirring until it thickens. 3. Remove from the heat and add the finely chopped chocolate, melting well, then leave to cool. 4. Dough: combine water, milk, butter and salt in a saucepan. Bring to the boil and add the honey. 5. Add the flour and cook, stirring continuously until completely absorbed. 6. Let it cool a little and add the eggs one at a time. 7. Shape the eclairs using a piping bag, then bake in the oven at 180° for 35 minutes. 8. Fill with the chocolate cream prepared earlier. 9. For the icing: melt the chocolate in the hot cream and use it to decorate
