Chocolate Lava Cake

Ingredients:

1/2 cup unsalted butter, plus more for greasing

1 cup bittersweet chocolate, chopped

2 eggs

2 egg yolks

1/4 cup sugar

1/2 teaspoon vanilla extract

2 tablespoons all-purpose flour

Pinch of salt

Directions:

Preheat your oven to 425°F (218°C). Grease four 6-ounce ramekins with butter and dust lightly with cocoa powder, tapping out the excess.

In a small saucepan over low heat, melt the butter and chocolate together until smooth. Remove from heat and let cool slightly.

In a medium bowl, whisk together the eggs, egg yolks, and sugar until light and thick.

Add the melted chocolate mixture to the egg mixture, along with the vanilla extract. Stir well to combine.

Sift the flour and salt into the chocolate mixture and fold gently until combined.

Divide the batter evenly among the prepared ramekins. Place them on a baking sheet.

Bake for 12-14 minutes, or until the edges are firm but the center is still soft.

Let the cakes stand for 1 minute, then invert onto plates.

Serve immediately, optionally with a scoop of vanilla ice cream or a dusting of powdered sugar.
