Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Cauliflower:
- Remove the leaves from the cauliflower, but keep the core intact.
- Trim the stem so that the cauliflower sits flat in a baking dish or on a baking sheet.
- Make the Spice Mixture:
- In a small bowl, mix together the olive oil, minced garlic, onion powder, paprika, turmeric (if using), cumin, coriander, salt, black pepper, and cayenne pepper.
- Coat the Cauliflower:
- Brush the entire cauliflower with the spice mixture, ensuring it is well coated.
- Roast in the Oven:
- Place the cauliflower in a baking dish or on a baking sheet.
- Roast in the preheated oven for 45-60 minutes or until the cauliflower is golden brown and can be easily pierced with a knife.
- Baste Occasionally:
- Optionally, baste the cauliflower with the accumulated spice mixture every 15-20 minutes during cooking for added flavor.
- Check for Doneness:
- The cauliflower is done when it’s fork-tender and has a nice golden crust.
- Serve:
- Transfer the whole roasted cauliflower to a serving platter.
- Garnish with chopped fresh parsley if desired.
- Serve with lemon wedges on the side for squeezing over the cauliflower before eating.
- Slice and Enjoy:
- Slice the cauliflower into wedges and serve as a side dish or a flavorful main course.
Optional:
- You can also drizzle with tahini or yogurt sauce before serving for added richness.
Note:
- Cooking times may vary depending on the size of the cauliflower. Adjust accordingly and check for doneness by inserting a knife into the center.
