I love an easy side dish, especially one that can be a meal on it’s own if I want! This simple bacon corn casserole can be made in the slow cooker for even more ease!

Slow cooker recipes are amazing because they can go about their business without intervention from me. That’s the best. I can do whatever else needs doing without watching over this Crockpot corn casserole while it cooks.

Here is what you will need to make my Crockpot corn casserole:

I make mine in a fairly large Crockpot, I’ll link one below so you can see! This would also work in the casserole style slow cookers I think!

We will also be using cream style sweet corn, eggs, cream cheese with chives, cornbread mix, and crumbled bacon!

You can buy real bacon bits and use that if it’s easier. I just bake up some bacon and use that in recipes like this one!

Is this a gluten free side dish?

It will depend on what kind of cornbread mix you use! All of the other ingredients are naturally gluten free so the only thing you need to watch for is the cornbread mix.

If you have a favorite brand that is gluten free, feel free to use it! This is an easy and forgiving recipe so you can try out whichever mix you like for your dietary restrictions.

How to make baked corn in the slow cooker:

This recipe is ready to go after a few hours on low. I wouldn’t use high heat on this one because it will make the edges burn on the casserole. Everything is very simple and straightforward though, let’s get started!

Spray a 5-quart oval slow cooker with cooking spray

In a medium bowl, mix egg and cream cheese.

Mix in the cream corn.

Add in the muffin mix and ¾ cup of the bacon; stir to combine.

Pour into the slow cooker. Cover; cook on Low heat setting 4 hours to 4 hours 30 minutes or until the mixture is set and pulls away from the side of the cooker.

Top with remaining 1/4 cup bacon. Let stand 5 minutes before serving.

  • 2 14.75-ounce cans of cream style sweet corn
