How to make Crockpot Italian Beef Po’ Boys:
Step 1. Place the onions, liquid from the peppers, Italian seasoning, black pepper, minced garlic, and water in the bottom of a Crockpot. Stir to combine.

Step 2. Add the roast to the Crockpot, and toss to coat in the mixture.
Step 3. Put the lid on the Crockpot and cook on low for 6-8 hours.
Step 4. Mix the gravy packets with water according to the package instructions.
Step 5. Shred the beef and return it to the Crockpot.
Step 6. Pour the gravy into the Crockpot.
Then replace the lid, and cook on low for an additional hour.
Step 7. Serve the meat on sub rolls with the pepperoncini peppers as garnish if desired.
