Easy Layered Taco Bake

Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 3/4 cup water
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 2 cups shredded Mexican blend cheese
  • 4 large flour tortillas
  • 1 cup sour cream
  • 1 cup salsa
  • Optional toppings: chopped lettuce, diced tomatoes, sliced black olives, chopped green onions, sliced jalapeños

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook Ground Beef:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the taco seasoning mix and water to the skillet. Stir to combine and cook according to the seasoning packet instructions, usually about 5 minutes.
    • Stir in the black beans and diced tomatoes with green chilies. Cook until heated through.
  3. Assemble Taco Bake:
    • In a 9×13-inch baking dish, start with a layer of a flour tortilla. You may need to cut the tortillas to fit the dish.
    • Spread a third of the beef mixture over the tortilla, then sprinkle with 1/2 cup of cheese.
    • Repeat the layers two more times, ending with the final flour tortilla on top.
  4. Bake:
    • Spread the sour cream evenly over the top tortilla, then sprinkle with the remaining cheese.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Remove from the oven and let it cool for a few minutes. Cut into squares and serve with salsa and your favorite optional toppings.
