French Onion Mashed Potatoes

Ingredients:

2 pounds Yukon Gold potatoes, peeled and quartered

1 large onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 cup beef broth

1/2 cup cream

Salt and pepper to taste

1/2 teaspoon thyme

1/4 cup grated Parmesan cheese (optional)

Directions:

In a large pot, bring salted water to a boil. Add potatoes and cook until tender, about 20 minutes.

While the potatoes are cooking, heat butter and olive oil in a skillet over medium heat. Add sliced onions and cook, stirring frequently, until deeply caramelized, about 15-20 minutes. Add thyme and season with salt and pepper.

Drain the potatoes and return them to the pot. Mash the potatoes until smooth.

Stir in cream and continue to mash until creamy. Adjust seasoning with salt and pepper.

In a small saucepan, heat beef broth and add to the caramelized onions, simmering for about 5 minutes until slightly reduced.

Serve mashed potatoes topped with caramelized onion gravy and sprinkle with grated Parmesan cheese if desired.
