Fried aubergine parmigiana: the rich and simple recipe to prepare

Ingredients:

2 large aubergines
2 cans of tomato pulp (400 g each) for the sauce
2 cloves of garlic
fresh basil
120 g grated parmesan
600 g provola
8-10 slices of cooked ham
extra virgin olive oil
Approximately 1lt of oil for frying
salt to taste
00 flour for the breading to taste

Preparation:

1. First wash the aubergines and cut them into slices.
2. Place them in a bowl and salt them.
3. Cover them with cling film and let them rest for an hour.
4. In the meantime, prepare the sauce.
5. Dredge them in flour and fry them in hot oil.
6. Assemble the parmigiana and bake at 180° for 40-45 minutes.
