Garlic Shrimp and Coconut Milk

Ingredients:

12 shrimp, size 16/20, raw, peeled, deveined
200 g. small shrimp, boiled, peeled
1 crushed garlic clove
salt and pepper to taste
3 large mushrooms, sliced

Sauce:

1 tsp ginger powder
1 tbsp soy sauce
1 tbsp sweet and sour sauce
1 tbsp oyster or fish sauce (Nam Pla)
1 tsp Sriracha or other chili sauce
1 cc sugar
120 ml white wine
400 ml coconut milk

Directions:

In a medium bowl, add all the ingredients for the sauce except the coconut milk, mix and set aside

In a skillet, heat 2 tbsp vegetable oil over medium/high heat, add shrimp and garlic, sear on all sides until shrimp turn orange, add baby shrimp, cook 1 minute, remove from pan and set aside

In the same pan, add a little oil if necessary, cook the mushrooms until they have released their water, add the sauce, reduce by half, add the coconut milk, bring to the boil, cook for 3 minutes, stir, taste and adjust the spices, add the shrimp, just cook to warm up

Serve with jasmine rice, basmati, rice noodles or other noodles of your choice
