Gratin Chicken Breast with Nuts

Ingredients:

For 8 people
700 g chicken breast (4 units)
60 melted butter
1/2 lemon
60 gr breadcrumbs
20 g nuts (pine nuts, almonds and toasted hazelnuts)
1 red onion
150 g of mushrooms
125 g cherry tomatoes
3 sprigs parsley
1 glass white wine
3 tablespoons extra virgin olive oil
Salt
Pepper

Directions:

Cut the vegetables
Cut the earthy stem of the mushrooms, wash them and cut them into quarters or thick slices, peel the onion and cut it into strips, wash the tomatoes and cut them in half.

Aromatizes
Arrange the tomatoes, onion and mushrooms in an oven-safe dish, season with salt and pepper, sprinkle with chopped parsley and pour the wine into the oil.

Bake the vegetables
Cook the vegetables in the oven, preheated to 200° for 20 minutes.

Arrange the breasts
Then we place the chicken breasts on top, season lightly with salt and drizzle with half the melted butter and half the lemon juice.

Prepare the coast
Mix the breadcrumbs, the remaining parsley and the chopped dried red fruits, distribute the mixture over the chicken and pour the rest of the butter and lemon juice.

Final baking
Place the dish back in the oven, lower the temperature to 180° and bake for about 15 minutes, turn on the grill and grill the breasts for a few minutes, until a crispy or golden crust forms.
