Homemade Chicken Taquitos

Crispy Rolled Chicken Tacos

Ingredients:

2 cups cooked chicken, shredded

1 cup cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup green onions, chopped

1/4 cup cilantro, chopped

1 teaspoon cumin

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

12 small corn tortillas

Cooking oil for frying

Directions:

In a large bowl, mix together the shredded chicken, cheddar cheese, cream cheese, green onions, cilantro, cumin, chili powder, garlic powder, salt, and pepper.

Warm the tortillas in a microwave or on a skillet to make them pliable.

Place about 2 tablespoons of the chicken mixture on each tortilla and roll tightly.

Heat oil in a large skillet over medium heat. Fry the taquitos in batches, turning them occasionally, until they are golden brown on all sides, about 3-4 minutes.

Remove the taquitos from the oil and drain on paper towels.

Serve hot with your choice of dipping sauces like salsa, guacamole, or sour cream.
