Homemade Tapioca Pudding Recipe

Small pearl tapioca ½ cup
Milk (whole or 2%) 4 cups
White sugar ¾ cup
Eggs 3
White sugar (additional) ¾ cup
Vanilla 1 teaspoon

Instructions:

  1. Begin by rinsing the tapioca pearls and placing them in a small bowl. Cover them with water and let them soak for 45-60 minutes.
  2. In a large saucepan, add the milk and the first ¾ cup of sugar. Bring the mixture to a simmer over medium heat. Once small bubbles form, add the tapioca pearls and reduce the heat to a gentle simmer. Stir frequently and cook for 15-20 more minutes or until the pearls become translucent.
  3. While the pearls are cooking, beat the eggs in a medium-sized bowl. Gradually pour a stream of the hot mixture into the eggs, about a ⅓ cup at a time, stirring constantly. Continue until half of the hot mixture has been beaten into the eggs.
  4. Slowly pour the contents of the egg bowl back into the saucepan, continuously stirring.
  5. Cook for an additional 3-5 minutes or until the pudding starts to thicken. Keep in mind that it will continue to thicken as it cools.
  6. Remove the saucepan from the heat and stir in the vanilla. Transfer the pudding to serving dishes and chill it until serving.
