Homemade Teriyaki Sauce

Ingredients:

1/2 cup soy sauce

1/4 cup water

2 tablespoons sweet rice wine (Mirin)

1 tablespoon rice vinegar

1/4 cup brown sugar, packed

2 garlic cloves, minced

1 tablespoon grated fresh ginger

1 tablespoon cornstarch

2 tablespoons water (for cornstarch slurry)

Directions:

Combine Ingredients: In a small saucepan, mix together soy sauce, 1/4 cup water, Mirin, rice vinegar, brown sugar, minced garlic, and grated ginger. Stir to combine and dissolve the sugar.

Simmer: Place the saucepan over medium heat and bring the mixture to a slight simmer, stirring occasionally.

Thicken Sauce: In a small bowl, whisk together cornstarch and 2 tablespoons of water to create a slurry. Slowly stir the slurry into the simmering sauce, continuing to stir until the sauce thickens, about 1-2 minutes.

Cool and Serve: Remove the saucepan from heat and let the teriyaki sauce cool down. It will thicken further as it cools. Use immediately or store in an airtight container in the refrigerator.
