Hummingbird Bread

A deliciously delightful bread, some say it is cake, that has a long and rich history. The bread is a take on the classic ‘Doctor Bird Cake’ that was made so long ago. The main ingredients to this delicious bread would be pineapple and banana. So this tastes more like a Tropical treat than a bird treat.

Well at least to me, I think nuts and seeds when I think of birds eating.

Ultimately, to me this bread is a perfect toss up of Banana bread and a fruit bread.

No, not that same fruit bread that has been going house to house for generations. This is more of a simple fruit bread, without all the fruit.

            Can I add more fruit to this bread?

I would imagine you could add coconut, apples or even dates if you wanted to.

            How do I keep this bread fresh?

I store the bread in an airtight container and keep it in the refrigerator for up to 4 days.

            Can I freeze this bread?

It can definitely be frozen, as long as you have not frosted the bread beforehand. This recipe does not call for frosting on the bread, but I do know of many people, and have done so myself with a simple white powder sugar frosting.

What do you need to make Jamaican Bird Cake

2 well ripened bananas, mashed

¾ cup vegetable oil

2 eggs beaten,

1 cup granulated sugar

1 ½ cups flour

1 can pineapple chunks, drained

¼ cup raisins

½ cup chopped pecans or walnuts

½ tsp cinnamon

¼ tsp salt

½ tbsp Vanilla extract

1 tsp baking soda

How to make Jamaican Bird Cake

FIRST STEP:

Preheat the oven to 350*

Grease and flour a loaf pan

SECOND STEP:

In a medium bowl whisk together the flour, salt, sugar, cinnamon and baking soda

Add in the eggs and the oil and continue to stir

Fold in the vanilla, bananas, raisins, pineapple and chopped pecans

Pour the batter into the prepared loaf pan

THIRD STEP:

Bake for 45 to 60 minutes. Testing with a toothpick every 5 minutes when it hits the 45 minute time.

The bread is done when the toothpick comes out clean

Allow to cool in the pan for 20 minutes, before removing from the pan

Serve and enjoy!
