Ingredients:

  • 20 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups fresh spinach, chopped (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil or parsley (for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the jumbo pasta shells and cook according to the package instructions until al dente.
    • Drain the shells and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the Filling:
    • In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, chopped spinach (if using), minced garlic, oregano, basil, salt, and pepper.
    • Mix until well combined.
  3. Stuff the Shells:
    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of marinara sauce on the bottom of a large baking dish.
    • Fill each cooked pasta shell with the ricotta mixture using a spoon or a piping bag for easier filling.
    • Place the stuffed shells in the baking dish in a single layer.
  4. Top with Sauce and Cheese:
    • Pour the remaining marinara sauce evenly over the stuffed shells.
    • Sprinkle additional shredded mozzarella cheese on top.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  6. Garnish and Serve:
    • Remove the dish from the oven and let it cool slightly.
    • Garnish with fresh basil or parsley before serving.

Enjoy your Italian Stuffed Shells! They make a great main course, especially when served with a side salad and garlic bread.
