500g butter
6 Cups Flour
1 Cup sugar
1/cup fine desiccated coconut (optional)
6 Tsp baking powder
1 Tsp Salt
2 Tsp Vanilla essence
6 Eggs
Jam of your choice – it has to be apricot jam

mix everything together, sift dry ingredients into creamed mixture and mix everything with your hands.

Take 1 1/2 cups of dough and put it in a freezer for 30 minutes.
Press the rest of the dough into a Swiss roll baking tray. Spread over the apricot jam.
Now grate the dough from the freezer over the apricot jam.
Bake in a
Preheated oven: 180C
For 20 minutes until its golden b.
