Keto Chicken Meatloaf Cups

Ingredients:

  • 1 lb ground chicken
  • 1/2 cup almond flour

  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Sugar-free ketchup or barbecue sauce for topping (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. Mix the Ingredients: In a large mixing bowl, combine the ground chicken, almond flour, grated Parmesan cheese, chopped parsley, chopped onion, minced garlic, egg, Worcestershire sauce, dried oregano, paprika, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Form the Meatloaf Cups: Divide the mixture evenly among the compartments of the muffin tin, pressing it down gently to form cups.

  5. Optional Topping: If desired, remove the meatloaf cups from the oven a few minutes before they’re done cooking and top each one with a dollop of sugar-free ketchup or barbecue sauce. Return the muffin tin to the oven and bake for the remaining time.
