Lemon Pork Medallions

Here’s a recipe for Lemon Pork Medallions that’s sure to be a flavorful and satisfying meal:

Ingredients:

  • 1 lb pork tenderloin, trimmed and sliced into 1-inch thick medallions
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup chicken broth or white wine
  • 2 tablespoons butter
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Season the pork: Season the pork medallions with salt and pepper on both sides.
  2. Sear the pork: Heat the olive oil in a large skillet over medium-high heat. Add the pork medallions to the skillet and cook for 3-4 minutes on each side, or until browned and cooked through. Remove the pork from the skillet and set aside.
  3. Make the lemon sauce: In the same skillet, add the minced garlic and cook for 1-2 minutes, or until fragrant. Add the lemon zest, lemon juice, and chicken broth or white wine to the skillet, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer.
  4. Thicken the sauce: Let the sauce simmer for 3-4 minutes, or until it has reduced by about half. Stir in the butter until melted and the sauce has thickened slightly.
  5. Return the pork to the skillet: Add the cooked pork medallions back to the skillet, turning them to coat them in the lemon sauce. Let them simmer in the sauce for an additional 1-2 minutes to heat through.
  6. Garnish and serve: Remove the skillet from the heat and sprinkle the pork medallions with chopped fresh parsley, if desired. Serve the lemon pork medallions hot, with extra sauce spooned over the top.
  7. Enjoy! These Lemon Pork Medallions are tender, juicy, and bursting with bright citrus flavor. Serve them with your favorite side dishes, such as roasted vegetables, rice, or a salad, for a delicious and satisfying meal.
