Lemon Tiramisu

Lemon Tiramisu 🍋

Ingredients:
– 400 ml of water
– 70 g of granulated sugar
– The peel of 1 lemon
– 20 ml of limoncello
– 250 g of ladyfingers
– 500 g of mascarpone
– 200 ml of fresh cream
– 50 g of icing sugar
– 10 ml of limoncello
– The peel and juice of 1 lemon

Procedures:

1. Prepare the mascarpone cream:
– Pour the mascarpone and icing sugar into a bowl. Use a blender to blend for about 2 minutes, until creamy.
– Add the cold fresh cream little by little, continuing to mix until it is completely incorporated.
– Add the zest and juice of 1 lemon, 10 ml of limoncello (or lemon juice for an alcohol-free version) and continue mixing until you obtain a smooth cream. To put aside.

2. Prepare the limoncello syrup:
– In a saucepan, add the water, granulated sugar and the peel of 1 lemon. Mix with a spoon and bring to the boil.
– Turn off the heat and let it cool completely. Transfer the liquid into a bowl and add 20 ml of limoncello (or lemon juice for an alcohol-free version). Mix well and set aside.

3. Assemble the tiramisu:

– Quickly dip the ladyfingers in the limoncello syrup for a few seconds and arrange them in an even layer in a tiramisu pan.
– Cover the ladyfingers with a layer of previously prepared mascarpone cream.
– Continue alternating layers of soaked ladyfingers and mascarpone cream until the ingredients are used up, finishing with a layer of cream.

4. Decorate and rest:
– Decorate the surface with lemon slices or grated zest.
– Cover the pan with cling film and leave to rest in the fridge for at least 2 hours, but preferably overnight, so that the tiramisu strengthens and mixes well.

5. Serve:
– Before serving, decorate with additional slices of fresh lemon if necessary.
– Cut and enjoy the fresh and fragrant Lemon Tiramisu!
