Why I love Melt-In-Your-Mouth Melting Potatoes?

  • Who doesn’t love potatoes? This is a new, exciting variation on classic roasted potatoes.
  • The addition of broth and garlic makes the potatoes buttery and creamy.
  • While it does have a long cooking time, after you get the potatoes in the oven, there is very little to do, other than flip them once during the cooking time.

What does this dish pair well with?

If you need a side dish for pot roast, roasted chicken, or fish, this recipe will definitely suit those meals. Add a green vegetable like sweet peas, green beans or asparagus and you will have a well-rounded, tasty meal.

Can you use other types of Potatoes?

If you like, you can use red potatoes. However, you won’t get the buttery richness that Yukon Gold potatoes provide. In general, russet potatoes have too much starch for this kind of recipe to be as successful.

What other meals would work best with Melted Potatoes?

This recipe is a perfect side dish for almost any kind of meal. Whether you are serving sides with grilled meats or you need a new potato dish for Thanksgiving, Easter, Christmas or another holiday feast, this recipe will be just right.

How to serve Melt-In-Your-Mouth Melting Potatoes?

Tips:

  • Be sure to adjust the oven racks in your oven so that the potatoes will brown well.
  • Double-check that your baking dish is appropriate for the 500-degree temperature of this recipe. Not all glass dishes will work at those temps.
  • Flip the potatoes at the halfway point with a spatula to fully cook the potato chunks.

Variations:

  • You can swap out various herbs and spices for your favorites.
  • Add some cumin and chili powder to the herbs to make a Mexican-style recipe.
  • If you don’t have olive oil, you can use any mildly flavored cooking oil.
  • If you don’t want to peel the potatoes, you can leave the skins on for a slightly different texture.
