If you’re craving a dessert that’s anything but ordinary, Pineapple Coconut Surprise Cake is the answer. With its moist texture, tropical flavors, and delightful “surprise” ingredients, this cake is sure to be a hit at any gathering or simply enjoyed as a special treat for yourself.

Ingredients:

INGREDIENTS AMOUNT
Yellow cake mix 1 box
Vanilla instant pudding mix 1 (3.4 oz) package
Large eggs 4
Vegetable oil 1 cup
Water 1/2 cup
Crushed pineapple, drained 1 can (8 oz)
Sweetened shredded coconut 1 cup
Chopped nuts (optional) 1 cup

Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan, or use parchment paper for easy removal.
  2. Combine the cake mix, vanilla pudding mix, eggs, vegetable oil, and water in a large mixing bowl. Beat until smooth.
  3. Fold in the drained pineapple, sweetened coconut, and chopped nuts (if desired).
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. While the cake is still warm, poke holes in it with a fork and pour the reserved pineapple juice evenly over the cake.
  7. Allow the cake to cool in the pan on a wire rack, then cut into squares to serve.
