Nana’s Spaghetti Sauce
Ingredients:
2 cans (28 ounces each) crushed tomatoes
1 small can (6 ounces) tomato paste
4 tablespoons olive oil
1 large onion, finely chopped
4 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar (optional)
1/2 cup red wine (optional)
Water as needed
Directions:
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onions are translucent and garlic is fragrant, about 5 minutes.
Stir in the tomato paste and let it cook for a minute to deepen the flavor.
Add the crushed tomatoes, chopped basil, oregano, salt, pepper, and sugar. Mix well.
If using, pour in the red wine; this adds depth to the sauce’s flavor.
Reduce the heat to low and let the sauce simmer, partially covered, for at least 2 hours, stirring occasionally. If the sauce gets too thick, add a bit of water to reach the desired consistency.
Adjust the seasoning as needed before serving. This sauce pairs beautifully with any pasta.
