Plum Cake

Ingredients:

For the dough:
125 g butter, room temperature
125 grams of sugar
1 packet of vanilla sugar
2 egg(s)
175 grams of flour
1 teaspoon level baking powder
100 g almond(s), unshelled, ground

For covering:
750 g plum(s), pitted, halved
sugar, for sprinkling

Directions:

Preheat the oven to 175°C, also with fan oven.

Prepare a batter from the ingredients for the dough. Line the springform pan (26 cm) with baking paper and pinch the paper with the edge. If it’s not a coated pan, grease it. Pour in the batter and smooth out.

Insert the point of the plum halves into the dough, tightly packed. To be on the safe side, wrap the springform pan with aluminum foil from below (spilled fruit juices are the worst thing for the oven. Make sure that the non-reflective side of the foil is facing outwards).

Bake for about 70 minutes on the 2nd shelf from the bottom.

Sprinkle with some sugar before serving.
