Potato Pastry Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup mashed potatoes, cooled (about 1 medium potato)
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar (for sweet pastry, optional)
  • 2-4 tablespoons ice water, as needed

Instructions:

  1. Prepare Mashed Potatoes: Peel and chop the potato into small cubes. Place the potato cubes in a saucepan, cover with water, and boil until tender, about 10-15 minutes. Drain the cooked potatoes and mash them until smooth. Allow the mashed potatoes to cool completely before using in the pastry dough.
  2. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and granulated sugar (if making sweet pastry). Add the cold, cubed butter to the flour mixture.
  3. Cut in Butter: Use a pastry cutter, fork, or your fingertips to cut the cold butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.
  4. Add Mashed Potatoes: Add the cooled mashed potatoes to the flour and butter mixture. Use a fork or pastry cutter to mix the potatoes into the dough until evenly distributed.
  5. Add Ice Water: Gradually add ice water to the dough, 1 tablespoon at a time, mixing with a fork until the dough begins to come together. Be careful not to overwork the dough. Stop adding water when the dough holds together when squeezed but is not too wet or sticky.
  6. Form a Dough: Turn the dough out onto a lightly floured surface and gently knead it a few times until it forms a smooth ball. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to allow the dough to rest and chill.
  7. Roll Out the Dough: After chilling, remove the dough from the refrigerator and let it sit at room temperature for a few minutes to soften slightly. Roll out the dough on a lightly floured surface to your desired thickness for your recipe.
  8. Use as Desired: Use the potato pastry dough according to your recipe instructions, whether for pies, tarts, turnovers, or other pastries.
  9. Bake: Follow the baking instructions for your specific recipe, as baking times and temperatures may vary depending on the type of pastry you’re making.
  10. Enjoy: Enjoy your delicious creations made with homemade potato pastry!

This potato pastry dough adds a lovely tenderness and flavor to your baked goods, making them extra special. Whether you’re making savory pies or sweet tarts, this versatile dough is sure to be a hit.
