Queso Chicken Bake

Ingredients:

4 boneless, skinless chicken breasts

1 cup salsa

1 cup shredded Mexican blend cheese

1 cup queso fresco, crumbled

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Chopped fresh cilantro, for garnish

Lime wedges, for serving

Instructions:

Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick spray or olive oil.

Season the chicken breasts with chili powder, cumin, salt, and pepper on both sides.

Place the seasoned chicken breasts in the prepared baking dish.

Spoon salsa over each chicken breast, covering them evenly.

Sprinkle shredded Mexican blend cheese on top of the salsa layer.

Crumble the queso fresco over the shredded cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Once cooked, remove the foil and switch the oven to broil. Broil the chicken for an additional 2-3 minutes, or until the cheese is bubbly and slightly golden.
