Quick and Creamy Cake with 3 Yogurts and 2 Eggs

Ingredients:
– 3 natural yogurts (about 125g each)
– 2 eggs
– 200g sugar
– 180g flour
– 1 sachet yeast
– 100ml vegetable oil
– Zest of a lemon (optional)
– Butter and flour for the mold (or baking paper)

Instructions:

1. Preheat the oven to 180°C (thermostat 6).
2. In a large bowl, whisk the yoghurts, eggs and sugar until smooth.
3. Add the vegetable oil and mix well.
4. Sift the flour and baking powder into the liquid mixture. Mix gently until the mixture is smooth and free of lumps.
5. If desired, add the zest of a grated lemon to the mixture for added flavour.
6. Grease and flour a tin of your choice (or use baking paper to make it easier to unmold). Pour the mixture into the prepared tin.
7. Place the cake in the preheated oven and bake for about 30-35 minutes, or until a toothpick inserted into the centre comes out clean.
8. Once cooked, remove the cake from the oven and let it cool in the tin for a few minutes. Then, unmold it and let it cool completely on a wire rack before serving.
9. You can sprinkle the cooled cake with icing sugar before serving, or decorate it as you like.
