Rice Croquettes

Ingredients:

2 to 3 tbsp. Of olive oil
1 small onion (chopped)
1 tsp. of Manteca
1 tbsp. Wheat flour (diluted in a little water)
c/n leftover rice
1 tsp. by Maizena
50 gr. of grated cheese
Salt to taste
Black pepper to taste
Chopped parsley to taste
c/n Oil for frying

Directions:

We begin to heat the oil in a saucepan and then add the chopped onion until it is transparent, at the same time we add the teaspoon of butter.
While the onion is browning, prepare a splash of water in a small container or cup and add the tablespoon of flour, mix well and add it to the saucepan.
We let it cook for a few minutes and remove from the heat, and then transfer it to a container where we are going to prepare the mixture of the croquettes.
Next we add the leftover rice, the teaspoon of cornstarch and the pinch of salt.
Also the grated cheese, the black pepper and the chopped parsley, we mix all the ingredients until they are well integrated and it is ready to assemble and fry the croquettes.
While we are heating the oil, we begin to shape each rice croquette with the help of a spoon, we will give it the appropriate size.
When we already have the oil at a suitable temperature, we are adding in the oil until they are golden on both sides to taste. It is suggested to place them on a tray with absorbent paper to remove excess oil.
Another healthier option is to cook them in the oven on a tray with parchment paper and brown them on both sides.
Finally, we will obtain delicious croquettes, dry, golden and ready to taste as an appetizer or to accompany meat, chicken or fish, to taste.

Recommendations:
When we heat the oil to fry the croquettes, the suggestion is to do it at approximately 70º C and that the amount of oil covers all the croquettes well, so that the frying is even.
The aforementioned recipe is basic, so we can vary the ingredients and flavors we want to give it to our liking.
We recommend that when shaping the croquettes, you anoint your hands with a little oil so that the dough does not stick to you and you can handle them much better.
To finish, they can also be filled with a hard-boiled egg or anything you can imagine: ham, chicken, minced meat, some vegetable, etc. The options are endless.
