Salmon Nuggets

Ingredients:

  • 1 lb (450g) salmon fillet, skin removed
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Cooking spray or olive oil for greasing

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease it with cooking spray or olive oil.
  2. Cut the salmon fillet into bite-sized nuggets.
  3. In a shallow dish, mix together the breadcrumbs, grated Parmesan cheese, dried dill, garlic powder, onion powder, salt, and pepper.
  4. Dip each salmon nugget into the beaten eggs, shaking off any excess.
  5. Coat each nugget with the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the salmon.
  6. Place the coated salmon nuggets onto the prepared baking sheet, leaving space between each nugget.
  7. Lightly spray the tops of the nuggets with cooking spray or drizzle with a little olive oil.
  8. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown and crispy.
  9. Once done, remove the salmon nuggets from the oven and let them cool slightly before serving.
  10. Serve the salmon nuggets hot with your favorite dipping sauce, such as tartar sauce, aioli, or sweet chili sauce.
