Slow Cooker Pineapple Pork

Ingredients:

2 pounds pork shoulder, trimmed of excess fat and cut into 1-inch cubes

1 cup pineapple chunks (fresh or canned)

1 onion, diced

3 cloves garlic, minced

1/4 cup soy sauce (or tamari for gluten-free)

1/4 cup ketchup

2 tablespoons brown sugar (or a sugar substitute for keto)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon ginger, minced

Salt and pepper to taste

2 tablespoons cornstarch (or a low-carb thickener for keto)

2 tablespoons water

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cauliflower rice or steamed vegetables (optional, for serving)

Instructions:

In a slow cooker, combine the pork cubes, pineapple chunks, diced onion, minced garlic, soy sauce, ketchup, brown sugar, rice vinegar, sesame oil, ginger, salt, and pepper. Stir well to coat the pork evenly with the sauce ingredients.

Cover the slow cooker and cook on low heat for 6-8 hours, or until the pork is tender and cooked through.

In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the slow cooker, mixing well to thicken the sauce. Cook for an additional 30 minutes on low heat, or until the sauce has thickened.

Once the sauce has thickened, taste and adjust seasoning if needed. If desired, serve the slow cooker pineapple pork over cauliflower rice or with steamed vegetables.
