Slow Cooker Pork Chops & Rice
Ingredients:
- 4 bone-in pork chops
- Salt and pepper to taste
- 1 cup long-grain white rice, rinsed and drained
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup chicken broth or water
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Chopped fresh parsley for garnish (optional)
Instructions:
- Season the pork chops with salt and pepper on both sides.
- In a large skillet, heat some oil over medium-high heat. Sear the pork chops for 2-3 minutes on each side, until they are golden brown. This step helps to lock in the flavor.
- In a slow cooker, layer the rinsed and drained rice at the bottom.
- Place the seared pork chops on top of the rice layer.
- In the same skillet used for searing the pork chops, add a little more oil if needed. Sauté the sliced onion and minced garlic for 2-3 minutes, until softened and fragrant.
- Pour the sautéed onion and garlic over the pork chops in the slow cooker.
- In a mixing bowl, whisk together the condensed cream of mushroom soup, chicken broth or water, dried thyme, and paprika until well combined.
- Pour the soup mixture over the pork chops in the slow cooker, ensuring that the pork chops are well-covered.
- Cover the slow cooker and cook on low heat for 4-5 hours, or until the pork chops are tender and cooked through, and the rice is tender.
- Once done, remove the lid from the slow cooker and check for seasoning. Adjust salt and pepper if needed.
