Slow Cooker Pork Chops & Rice

Ingredients:

  • 4 bone-in pork chops
  • Salt and pepper to taste
  • 1 cup long-grain white rice, rinsed and drained
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup chicken broth or water
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the pork chops with salt and pepper on both sides.
  2. In a large skillet, heat some oil over medium-high heat. Sear the pork chops for 2-3 minutes on each side, until they are golden brown. This step helps to lock in the flavor.
  3. In a slow cooker, layer the rinsed and drained rice at the bottom.
  4. Place the seared pork chops on top of the rice layer.
  5. In the same skillet used for searing the pork chops, add a little more oil if needed. Sauté the sliced onion and minced garlic for 2-3 minutes, until softened and fragrant.
  6. Pour the sautéed onion and garlic over the pork chops in the slow cooker.
  7. In a mixing bowl, whisk together the condensed cream of mushroom soup, chicken broth or water, dried thyme, and paprika until well combined.
  8. Pour the soup mixture over the pork chops in the slow cooker, ensuring that the pork chops are well-covered.
  9. Cover the slow cooker and cook on low heat for 4-5 hours, or until the pork chops are tender and cooked through, and the rice is tender.
  10. Once done, remove the lid from the slow cooker and check for seasoning. Adjust salt and pepper if needed.
  11. Serve the Slow Cooker Pork Chops & Rice hot, garnished with chopped fresh parsley if desired.
