Slow cooker swiss steak
Ingredients:
- 2 pounds round steak, cut into serving-size pieces
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon dried basil
- 1/2 cup beef broth or water
- 2 tablespoons cornstarch (optional, for thickening)
- Chopped fresh parsley for garnish (optional)
Instructions:
- Season the round steak pieces with salt and pepper, then dredge them in flour, shaking off any excess.
- Heat vegetable oil in a large skillet over medium-high heat. Brown the steak pieces on both sides, working in batches if necessary to avoid overcrowding the skillet. Transfer the browned steak to the slow cooker.
- In the same skillet, add the sliced onion and minced garlic. Cook for 2-3 minutes, or until softened and fragrant. Transfer the onions and garlic to the slow cooker, arranging them over the steak.
- In a medium bowl, mix together diced tomatoes, tomato sauce, Worcestershire sauce, dried thyme, dried oregano, paprika, and dried basil. Pour this mixture over the steak and onions in the slow cooker.
- Pour beef broth or water over the steak and tomato mixture in the slow cooker.
- Cover and cook on low heat for 6-8 hours, or until the steak is tender.
- Optional: If you prefer a thicker sauce, mix cornstarch with a little water to form a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking time. Allow the sauce to thicken.
